Easy and Healthy Ratatouille Recipe
This is one of my family’s favorite dinners – even my preschoolers love it. Want to know the best part? This recipe is FULL of colorful vegetables. Your kids will be eating zucchini, eggplant, peppers, and more and not even realize it. Seriously. Please try this Ratatouille Recipe. You will NOT be disappointed.
It’s so easy to make that I even made it the last time we went camping. That’s where I snatched these pictures. The vegetables are chopped a little large – but it was still good! It was so easy to make in my Lodge Cast Iron Dutch Oven. Don’t tell me that I’m the only one addicted to some good cast iron and camping food!
Quick Note: One of the ingredients is Basil Essential Oil. Not all essential oils are created equally. I would never run to the store and grab whatever bottle of basil oil I could find – chances are, it’s not the real thing and it’s not safe. I only recommend CPTG essential oils from doTERRA. Ingredients
- 1 TBSP Olive Oil
- 1 lb Sage Sausage
- 1 pared and chopped eggplant
- 1 chopped zucchini
- 1 pared and chopped yellow squash
- 1 medium onion
- 1 chopped red bell pepper
- 1 chopped orange bell pepper
- 1 can tomato sauce
- 1-2 drops Basil Essential Oil
- 1 TBSP Balsamic Vinaigrette
- Himalayan Salt and Pepper to taste
Don’t all those vegetables just make you super excited??? Your two year will be scarfing down eggplant and love it!
Directions
- Heat a large saucepan to medium heat and add olive oil. Add sausage, cook thoroughly, ground meat.
- Once the sausage is cooked through, add all the vegetables and the tomato sauce. Cook for 5-8 minutes, stir occasionally.
- When the vegetables are cooked through, stir in your Basil essential oil, salt, and pepper. The Basil oil gives this recipe a fantastic flavor!
- Remove from heat, stir in Balsamic Vinaigrette.
- Serve while hot!
Easy, right?? Yup! The hardest part of the whole recipe is just chopping all the vegetables!
