I’m not a big breakfast person. I enjoy the stereotypical pancakes or waffles or cereal – but they never seem to keep me full. I’ve been in search of a new breakfast staple that’s both delicious and will keep me full until lunch.
Good news.
I FOUND THE ANSWER!!! Mini Quiche!!
They are super delicious, easy to make, and the kids LOVE them.

Let’s get started on some quiche!
Scramble some sausage.
Chop some spinach and bell peppers.
Mix the sausage, bell peppers, and spinach together. Lily loves to help anyway that she can. And we use a lot of Montessori methods, so I try to get her involved when I cook. So let your 2 year old stir!
In a separate bowl, mix 5-6 eggs, 1/4 cup milk, 1 tsp of salt, and 2-3 drops of Black Pepper.

Oil mini cupcake pan with olive or coconut oil. Line cups with wonton wrappers.
Add 1 Tbsp of the egg mix to each cup.
Add a little bit of mix to each cup. Can you tell which side my 2 year old worked on?
Add another Tbsp of the egg mix into each cup.
optional: Sprinkle the tops with cheddar cheese
Bake the eggs rolls for 20 minutes at 350 degrees!

makes 24 mini quiche 20 min prep, 20 min bake
Ingredients:
1 bell pepper
3 sausage patties
1 cup spinach
6 eggs
wonton wrappers
olive oil
salt
Black Pepper essential oil
Instructions:
